Meet the Team

Your Hosts

The people who give Cavomarina Beach its heart and soul.

At Cavomarina Beach Hotel, we believe that a hotel is not only defined by beautiful rooms, a privileged beachfront location, or good food and drinks. All of this is important, of course, but what truly turns a holiday into a special memory is the people.

Our team is the heart of Cavomarina. They are the morning smiles, the helping hands when something is needed, the small details that are not always seen, but always felt. They are the people who make our guests feel not only welcome in a hotel, but cared for, appreciated, and part of our little family by the sea.

That is why we would like to introduce you, step by step, to some of the people who form the soul of our hotel. Each of them brings something unique: experience, warmth, energy, patience, joy, and above all, a true passion for making our guests happy.

We begin this series with a selection of our main team members, people who truly represent the spirit of Cavomarina Beach: familiar, personal, authentic, and always with their heart in every detail.

Florian Söhnel

General Manager

Florian Söhnel

It may feel a little unusual to start this series by introducing myself first, but perhaps it is also the most natural way to begin. Cavomarina Beach Hotel is, above all, a story about people, and I would like to share a little bit of my own story before introducing the wonderful team that gives this hotel its heart and soul every day.

I was born in Berlin and grew up between Germany, Spain, France and, today, Greece. This mix of cultures has shaped not only my life, but also the way I understand hospitality: open, warm, personal and full of character.

After many years in hotel management, leading luxury hotels, holiday clubs and large resort hotels, with a strong specialization in Food & Beverage, I reached a point where I wanted something different. Shortly before reaching complete burnout, I decided to take on this wonderful family project: Cavomarina Beach Hotel. And what a journey it has been.

Of course, this journey also means being away from my family more often than I would like. I miss my two daughters, Sophia and Noa, very much. Luckily, they come to visit me often, and Corfu has become a special place for them too. Sophia, who is a singer, has even used the beauty of this island as the setting for some of her music videos. Over the years, we have managed to bring together a truly special team. People who love what they do, who care deeply about our guests, and who come to work every day with one simple goal: to make sure that every guest enjoys unforgettable days with us.

We enjoy working together. We laugh, we help each other, we solve every little issue together, and we try to put heart into every detail. We are a team in the real sense of the word, and we believe our guests can feel that.

For us, every satisfied new guest is a success. Every returning guest is a gift. And every guest who becomes a friend of Cavomarina is one of the greatest achievements we can imagine.

This is what Cavomarina means to me: a hotel by the sea, yes, but even more than that, a place full of people who care.

Inessa Dallakian

Guest Experience & Reception

Inessa Dallakian

Hello, my name is Inessa Dallakian. I work at the reception of Cavomarina Beach Hotel, and Florian has entrusted me with a very special mission: to take care of the personal experience of each and every one of our guests.

I was born in Armenia, but I have been living for many years in the south of this wonderful island of Corfu, a place that has become my home. Like many people in our team, I combine my work at the hotel with family life and the beautiful, sometimes challenging, adventure of raising my two children.

I have several years of experience working in large hotels in Corfu, but Cavomarina is truly the place where I feel I can be myself. Here, I am allowed to do what really fills my heart: enjoy my work while trying to make every guest feel happy, cared for and personally welcomed.

For me, reception is not only about check-ins, keys or information. It is about the first smile, the first impression, the little conversation, the personal recommendation, and sometimes simply being there when someone needs help or advice.

Every guest is different, and that is what makes my work so special. My goal is that each of you feels not just like a visitor, but like someone we are genuinely happy to have with us. Welcome to Cavomarina. I am very happy to be part of your holiday experience.

Kostas Serpanos

Head Chef

Kostas Serpanos

My name is Kostas Serpanos, and I was born in Athens. For as long as I can remember, I have had a deep passion for food, especially Greek food. For me, Greek cuisine, like so much of Mediterranean cuisine, begins with the product itself: good olive oil, fresh fish, vegetables full of life, herbs, seasonal ingredients and fruit that still tastes like fruit.

In our kitchen at Cavomarina Beach Hotel, we have a very clear mission: to cook as if we were cooking at home.

During my career, I have managed kitchens serving more than 3,000 guests and created impressive buffets on a very large scale. But here at Cavomarina, our philosophy is different. We do not cook to impress with size or grandeur. We cook to create flavour, warmth and feeling.

Every dish we prepare should have care behind it. Every sauce, every salad, every Greek recipe, every simple plate should carry a little bit of love and a little bit of our Mediterranean soul.

Together with my kitchen team, I want our guests to feel that they are not just eating in a hotel restaurant, but enjoying food prepared by people who truly care about what they do. We hope you can taste that in every dish.

Katarina Deliu

Head Bartender

Katarina Deliu

My name is Katarina, and I am the Head Bartender at Cavomarina Beach Hotel. My passion is mixology. I truly love preparing each cocktail with care, attention and a little personal touch for every guest. For me, a cocktail is not just a drink. It is a small moment of pleasure, a little surprise, and sometimes even the beginning of a nice conversation.

Some guests come to the bar and ask me for something special, something different, something that allows me to use my creativity and surprise them. I love those moments. But I put exactly the same care into a special creation as I do into one of the classic cocktails from our all-inclusive list. Every drink deserves respect, and every guest deserves to feel that their cocktail was made especially for them.

I also love talking with our guests. Behind every person at the bar, there is a story, a journey, a reason for being here, and I enjoy discovering a little bit of that while preparing their drink.

I am from Corfu, but my passion for drinks and hospitality has taken me to different places and allowed me to gain international experience. Today, I bring all of that experience back home, here to Cavomarina, where I can combine creativity, Corfiot warmth and the pleasure of making our guests smile.

So, if you visit our bar, do not hesitate to put me to the test. I will be happy to prepare something special for you.

Spiros Vlachopoulos

Food & Beverage Manager

Spiros Vlachopoulos

My name is Spiros Vlachopoulos, and I am from Corfu. I have spent many years leading large service teams in major holiday resorts, and hospitality has been part of my life for a very long time. I have seen big operations, impressive restaurants, busy bars and service teams working for thousands of guests.

But I have to say something honestly: the warmth, enthusiasm and genuine care that I find in our small team at Cavomarina Beach Hotel is something very special. In many ways, it goes beyond everything I have experienced before.

Here, service is not only about bringing a plate, serving a drink or making sure everything runs smoothly. It is about creating a feeling. It is about looking after our guests with real attention, with a smile, with kindness and with the desire to make every moment of their holiday a little better.

And our guests feel it. They do not simply come, eat, drink and leave. They talk to us, they laugh with us, they come back to us, they thank us, they hug us, and many of them become friends of Cavomarina.

For me, this is the true meaning of hospitality. Not luxury for the sake of luxury, not service that feels distant or formal, but a real holiday feeling: relaxed, warm, personal and full of heart.

Together with our restaurant and bar team, my goal is to make every breakfast, every lunch, every dinner and every drink part of a holiday that our guests will remember with a smile.

Michel Oltra

Restaurant & Service Team

Michel Oltra

Hola, my name is Michel Oltra, and I come from the Canary Islands. For many years, I have worked in large hotels, leading great teams of waiters and taking care of guests together with Florian. Hospitality has been part of my life for a long time, and service is something I understand not only as a job, but as a way of making people feel comfortable, welcome and happy.

When Florian first proposed that I should come and work in Greece, I remember thinking: “My God, what am I going to do in Greece?” But now, after my third season at Cavomarina Beach Hotel, I can honestly say that I understand why I came. The people here are great, the team is something very special, and this place has a feeling that is difficult to explain until you experience it yourself.

Of course, now that I can even swear in Greek, everything has become much easier.

For me, Cavomarina is a great place to be. It has sun, sea, good food, good drinks, hard work, laughter, and above all, people with heart. And I truly believe that our guests feel the same when they are here.

Cavomarina is not just a hotel. It is a place where guests arrive for a holiday and often leave as friends. Cavomarina, ola kala.

Spiridoula Gianakopoulou

Breakfast Grill

Spiridoula Gianakopoulou

Kalimera, my name is Spiridoula Gianakopoulou. I come from Lefkimmi, here in the south of Corfu, and I have been working at Cavomarina Beach Hotel since the very beginning.

Every morning, I have the pleasure of preparing your favourite egg dishes individually for each of our guests. Whether it is an omelette, fried eggs or something simple just the way you like it, I always try to make sure your day starts with a smile.

I like to think that when the day starts well, it usually continues that way. And if I can help give each guest a nice start to their morning, then I am very happy.

I probably have one of the best working places in the hotel, with a beautiful sea view right in front of me. But to be honest, most of the time I am fully focused on your omelettes.

For me, breakfast is more than just the first meal of the day. It is the first little holiday moment of the morning. So come and see me at the grill, tell me how you like your eggs, and let us start your day in an eggs-traordinary way.

Jonny Osaze

Service Team

Jonny Osaze

My name is Jonny Osaze. I was born in Africa and moved to Greece a few years ago. Today, I live in Athens with my wife and our three lovely children, who are my biggest motivation in life.

My story at Cavomarina Beach Hotel started in a very simple and honest way: I started here washing dishes. At the beginning, I was working behind the scenes, helping the kitchen team and doing my part to make sure everything ran well. But Cavomarina is a place where people are seen, where effort matters, and where everyone can grow if they really want to.

One day, I was given the chance to work at the grill. Suddenly, I was no longer only behind the scenes. I was in front of our guests, preparing food, smiling, talking, listening, and discovering something very important about myself: I really enjoy being close to people.

I discovered that I love the contact with our guests. I love the small conversations, the jokes, the smiles in the morning, the friendly faces that come back day after day, and the feeling that, little by little, you get to know each person.

Then our Restaurant Manager spoke with the Chef, they made a little deal, and I was given the opportunity to move into the service team. Today, I am truly happy in this position. I feel proud when I can welcome our guests, serve them, help them, laugh with them and make them feel comfortable. For me, service is not only carrying plates or drinks. It is about attention, kindness and creating a good feeling.

Cavomarina has given me the chance to grow, to learn and to show who I am. That means a lot to me. This hotel is not only a workplace; it is a team, a family and a place where I feel appreciated.

I love this place. I love working here. And I love being part of the holiday memories of our guests. Ola kala.

Christina Basta

Housekeeping Team

Christina Basta

My name is Christina Basta, and I have worked at Cavomarina Beach Hotel since the beginning. I am very happy to see how the hotel gets better every year. The rooms are nicer every season, and I think our guests can feel that we try to take good care of everything.

What makes me very happy is to see some guests coming back again and again. Some of them come for the third, fourth or even fifth time. When I see them, I feel that Cavomarina is not only a hotel. It is becoming a family, and we are part of this family too.

My work starts very early in the morning. Many times it is still dark when we begin. We clean the common areas, the corridors and many little places before our guests wake up. We want everything to be clean, fresh and nice when they start their day.

Maybe our work is not always seen, but it is always there. A clean room, a fresh towel, a nice smell, a tidy place — all these small things are important for a good holiday.

I like working here very much. Cavomarina is a beautiful place, and I work with very good colleagues. We help each other, we laugh together, and we try every day to do our best.

For me, this is a good place to work, and I am happy when our guests feel good here. Cavomarina and my colleagues are also ola kala.
